Last year I hit a good walk from Battambang to Ek Phnom temple. Were 18 miles nice and relaxed, watching the Cambodian countryside and chatting with people in the villages.
At one point the road crossed several villages that are devoted almost entirely to prepare rice paper, Banh Trang in Vietnam and in Cambodia Sambok Nem. In both countries this role is not used only to prepare rolls, but wrapping is very popular with all types of food.
One family that prepared the paper invited me to go home to watch the process. Here's the video. A company capable of producing entirely handmade 2 000 wafers a day.
You see the simplicity with which they are made. Have a pan of boiling water, covered with a cloth or plastic. Above this surface extends a little rice flour dough and water, cover, and let a few seconds until it has formed a crepe. Then removed and allowed to dry in the sun on a bamboo trellis.
A rapid and laborious process.
The family was very caring and spent some time with me. One of the girls, the left of the video, spoke very good English. We chatted for a long time and he told me his dreams of seeing the world. He also told me that he knew would never see.
